Born and raised in Clermont, Florida in 1992, Matthew grew up on an orange grove with his brother and four cousins. He was always in the kitchen watching, tasting, learning, and asking Grandma questions about food. His passion for cooking from his early years took drove him to go to college at Le Cordon Bleu in Orlando, FL where he graduated with his degree in culinary arts. After graduation Matthew began his career as a sous chef at Second harvest within their catering department as their Banquet Chef. During this time Matthew was doing competitions with the Chaines des Rotisseur and was voted 2nd best chef of the Southeast Region of the United States of America and Caribbean. After Second Harvest he went to work at Deep Blu inside the Wyndham Grand at Bonnet Creek. There he honed his skills of fine dining and helped the Deep Blu kitchen to some prestigious awards including Best Restaurant in Orlando. At Deep Blu he had some great mentors to guide him along the way including Cory York, Geoffrey Gable, and Raul Carrasquillo. After leaving Deep Blu, Matthew was offered a position as the Executive Chef of Bubba’s Catfish House. The menu offers a variety of appetizers, seafood selections, and homemade desserts. The menu consists of food cooked to order, made from scratch, and never pre-made.
